i'm planning to print these recipes and hand them out at the market, since they go well with the stuff we're selling right now. i thought i'd share them here in case anyone is interested. they're quick and easy, and i think, quite tasty.
Raluca's Mixed Salad
1 bag (or ~0.5lbs) salad greens
2 hard boiled eggs, sliced
~1/2 cup toasted sunflower seeds
toasted sesame seeds, to taste
4-5 Kalamata olives (or any kind you prefer), pitted and sliced
Put salad greens in a large bowl.
Drizzle with ginger-garlic salad dressing (see companion recipe), tossing gently until greens are evenly coated.
Top with slices of boiled eggs, seeds and olives.
Serve immediately.
(If you'd like to prepare this salad in advance, put everything together except the dressing. Refrigerate, and add the dressing just before eating.)
Ginger-Garlic Salad Dressing
(the quantities below will make enough dressing for 1 bag or ~0.5lbs of salad greens)
1/2 in piece of fresh ginger root, grated or finely chopped
1 clove of garlic, crushed
2Tbsp sesame (or olive) oil
2Tbsp Tamari (or salt, to taste)
4Tbsp balsamic vinegar
2-3 Tbsp water
Put ginger and garlic in a small bowl. Add oil and soak for 5 to 10 minutes. Add remaining ingredients and mix well.
Just before eating, drizzle over salad, tossing gently until greens are evenly coated.
Sauteed Kale with Garlic
Olive oil
5 fresh kale leaves, chopped
4 (or more) cloves of garlic, crushed
Salt
Black pepper
~1 Tbsp balsamic vinegar (optional)
(the quantities above may be modified according to taste)
Coat pan with olive oil, and heat on medium.
Add chopped kale and garlic.
Cook on medium for 10 minutes, stirring frequently until kale is bright green and tender, yet still a little crispy.
Add salt and pepper just before removing from heat.
Drizzle with balsamic vinegar if desired, and serve.
